Baked Zucchini Crisps and Simple Garlic Aioli


You guys are probably sick of hearing me brag about the weather we have been blessed with lately but gahh it’s been incredible! We are so ready for spring and our first adventure into gardening. You guys will have to follow along for that! One thing at the top of our list for sure is zucchini. I cannot get enough of it lately! My 17 month old loves it too.

If you guys have been following along you know I try to stick to a mainly low-carb/low sugar diet. These things I am about to share with you are …. LIFE! They are so good! Especially if you are craving something crispy like chips or snacky like yummy restaurant appetizers. I could snack on these things all day, or eat them as a meal by themselves. They also go really well with my Spaghetti Squash recipe I posted a couple weeks back.


2 small-medium zucchini
2 cups grated parmesan cheese
2 eggs


-Preheat oven to 450
-Cut the zucchini into thin slices
-Whisk your 2 eggs in a bowl and add a splash of water
-Add the parmesan to a second bowl
-Line a cookie sheet with foil and spray with cooking spray
-Dip each zucchini slice into the egg then into the Parmesan, place onto cookie sheet
-After you have all your zucchini on the cookie sheet spray with cooking spray
-Bake for 6-12minutes until golden brown then flip and bake for an additional 4-6minutes

Ok these things are seriously so good but, couple of things…
-The amount of parmesan you need may really vary depending on the size of your zucchinis! So be prepared to have more on hand if needed.
-I’ve tried seasoning these a few different ways, feel free to get wild with it but be aware parmesan is a very salty cheese so I would avoid adding any salt. (Lessened learned, HA!) Now I usually skip the seasoning and dip them in something yummy instead.
-I love these dipped in a garlic aioli or marinara sauce.

Mix some mayonnaise, minced garlic, lemon juice and black pepper in a small bowl.

You will learn I tend to eyeball a lot of things and don’t get super technical with measurements. But I promise unless I have specified, it will not mess up your end result. I’ve done a lot of trial and error with these recipes and a lot is just personal preference!
