Easy Salmon Cakes

Hi guys! It’s a little chilly here today versus the 60-70degree+ days we have gotten recently. But I still think spring is just about almost here. The warmer weather has me dreaming of summertime. A huge part of summer time here in Maryland is seafood! Bring on the Old Bay, folks!

Seafood is also a great protein switch-up when you are chicken and beefed out! Today I am sharing my salmon cake recipe. These guys are so good! They are great by themselves, served with a salad, wrapped in lettuce with tomato and avocado, or if you’re not sticking low-carb, they would be great on a sandwich! I usually eat them by themselves with lots and lots of lemon juice! I could squeeze a couple wedges on each patty! The lemon really enhances the flavor. I like to sprinkle on a little extra Old Bay too.

INGREDIENTS:
•12ounces skinless, boneless wild salmon, canned and drained or fresh
•2teaspoons Old Bay seasoning
•1egg
•3tablespoons mayonnaise
•3/4cup panko breadcrumbs
•1 large or 2 small jalapeños, seeds removed and finely chopped

DIRECTIONS:
Mix all ingredients in a large bowl.
Form 6-8 patties.
Heat a couple of teaspoons of olive oil in a large pan over medium heat.
Fry 3-4 patties at a time until golden brown on each side.
Squeeze lemons for fresh juice!
