Low Carb Pizza Stuffed Mushrooms

A big craving I am constantly fighting is Italian food. I love it all-pizza, pasta, ahh! Especially lately, I have really been on an Italian kick. Behold, ladies and gentlemen, Pizza Stuffed Mushrooms! These things are so yummy and simple to whip up-no measuring needed! And all the ingredients are fairly inexpensive. WIN!

INGREDIENTS:
•Mushrooms
•Minced garlic
•Marinara sauce
•Shredded mozzarella cheese
•Pepperoni, cut into quarters
•Fresh basil for topping (optional)
•Parmesan for topping (optional)
•Olive oil

1- Preheat your oven to 375 (F) degrees
2-Clean mushrooms and cut off stems, set aside
3- Scoop out in insides with a small spoon, allowing enough room for filing
4-Chop stems finely
5-Heat a couple teaspoons of olive oil over medium heat, add chopped stems and garlic and cook for about 5 minutes
6-Allow to cool slightly, then stuff into mushroom caps
7-Top with marinara sauce, mozzarella cheese and quartered pepperoni
8-Bake for about 20min, broil tops at the end if needed
9-Top with chopped fresh basil and sprinkle with parmesan
9-Enjoy!
