I’m over here living that postpartum life. My baby is just about three months old and I’ve been getting back into my groove of low carb eating. I like to keep a good variety of quick and easy low carb recipes to rotate to help keep me on track and keep me from getting bored with my meals.
I have one of my favorite recipes to share! I don’t know about you guys but I feel like I have tried just about every low carb pizza alternative on the block! And while I actually like really like cauliflower crust pizza, I get sick of it at times and don’t always have the motivation to do all the steps involved in making it. After searching the internet high and low and testing several recipes, I finally got it right- the BEST low carb pizza (dare I say) EVER! This pizza’s “crust” gets much crispier and more “pizza-like” versus the veggie crusts I’ve tried. Luckily, it only takes a few ingredients and minimal prep time.
•4 cups shredded mozzarella
•1/4 cup marinara sauce
•toppings of choice
•Preheat oven to 450 (F) degrees
•In a bowl, combine 3 eggs and 3 cups mozzarella
•Sprinkle in some Italian seasoning and garlic powder
•Press onto a cookie sheet that has been prepped with aluminum foil and cooking spray, making it thin and round in shape
•Bake for 10-15 minutes (keeping a close eye on it) or until golden brown
•Top with marinara sauce, the leftover mozzarella and toppings
•Broil until the cheese is melted and bubbly
•Let cool for a few minutes, then slice up!
